The original idea for GroovyChocolate came from Jeremy Salvesen, an executive with over 10 years experience in the chocolate industry who had watched as children of all ages left sweet shops delighted because their names had been written on Easter eggs and other chocolate gifts. The technique, which essentially involves squeezing icing sugar out of a cloth bag, has been around for as long as there have been cakes and confectionary. Salvesen thought that there had to be a way of updating the process. What in retrospect seems the obvious answer was to print on the chocolate using edible food dyes instead of ink. This, however, was easier said than done as the composition and colour of chocolate proved not to lend itself to printing. Salvesen was not to be defeated. He and his colleagues at GroovyChocolate developed special processes - now being patented - that allow high-quality artwork to be displayed on a bar of chocolate. The chocolate is special too. The blends have an especially high proportion of cocoa solids, the standard measure of chocolate quality, with our dark chocolate consisting of 70% cocoa solids and our milk chocolate 38% - a much larger percentage than found in the best-selling popular brands.
